How Air Fryers Work
Air fryers are most similar to a small, efficient convection oven. They have a small fan that circulates hot air throughout the container. The hot air then crisps the outside of the food inside while fully cooking through to the center. The circulation of hot air reacts with the outer layer of food with spurs on another reaction between the protein and the sugars in the food. This is what gives the air fryer its name since the reaction results in a “fried” texture. So although the air fryer doesn’t actually “fry” any food in oil, it creates the same savory taste that you get from fried foods.
